Chicken Wings

3 lbs. chicken wings

2 TBSP. of Baja Joe
1⁄2 cup Dijon mustard
2 teaspoons olive oil
2 garlic cloves, minced

DIRECTIONS

Cut the chicken wings into three pieces and discard tips.
Add wings into a bowl or baggie then add 2 tbsp. of Baja Joe Seasoning
Mix remaining ingredients into a bowl.
Add wings and stir.
Cover and marinate for 45 minutes ( YOU CAN USE IMMEDIATLEY IF YOU HAVN’T TIME)
Grill over medium-hot coals about 15-20 minutes, turning once
When you remove wings squeeze with

Hot Daddy Dip
1⁄4 cup Dijon mustard
2 garlic cloves, minced

Tuscan Teff Risotto

INGREDIENTS
2 1/2 c mushrooms
2 t bsp butter
1/4 c cream
6 chicken thighs
1 large chopped onion
1 cup of grated Parmesan
1 chopped red pepper
1/2 cup white wine
1 large chopped onion
2 tbsp cut fresh parsley
3 minced garlic cloves
1 package of Teff Quinoa blend
1 Tbsp. Of olive oil
1- 10 oz can of tomato sauce

DIRECTIONS
1. In a large pot heat oil add chicken and cook through until cooked. Remove chicken from pot.
2. Using the same pot, add butter and saute peppers,onions, garlic, and mushrooms in butter and leftover oil mixture until translucent. Add the teff and quinoa blend and cook and stir for two minutes.
3. Add the wine, salt and pepper to the blend and stir frequently until the wine has been absorbed into the mix
4. Add 2 cup of water and stir frequently until absorbed. The Teff and broth should bubble gently.
5. Continue to cook the risotto mix add minced garlic and tomato sauce, cooked chicken pieces that have been cubed
6. Cook Teff Quinoa blend until tender which should take about 20-minutes.
7. Continue to stir the mixture through and add more water to get to your favoured consistency.
8. Add 1/2 cup of grated Parmesan cheese, the parsley and the cream and stir through.
9. Remove from heat when the risotto mix is a thick creamy consistency.
10. Serve immediately. The remaining Parmesan can be added to each serve if requested.

Grilled Leg of Lamb

This herby garlicy rubbed lamb is easy to prepare and so full of flavour serves 6. The lamb is best when you have the time to marinate up to 24 hours. Prepare your Meat Rub Blend and the Marinade you drizzle on before you serve it .

Ingredients you will need:
1 c of pitted olives
1/2 cup of olive oil
1 packet of Put Me Anywhere spice
2 tbsp c chopped parsley and 1 tbsp fresh chopped rosemary
3 cloves of minced garlic
5 lb leg of lamb butterflied
1 1/2 lemons seeded

Points to butterfly lamb leg
• Put the leg, meatier side down, on a large chopping board and use your fingers to locate the bone.
• Cut down vertically along the length of the leg to the bone, then begin to cut around the bone.
• Scrape the meat away from the bone as closely as possible.
• Continue to work your knife around and lift the bone free.
• Open out the lamb and cut down through any thicker parts, to give an even thickness.
• Cut away excess fat and sinew.
• Lay a piece of cling film over the meat and bash the surface with a rolling pin to flatten it slightly.
• The meat should be an even thickness throughout.

Marinade – Chop 1 c of olives to a paste like texture then add 1/4 cup of olive oil and 1Tbsp. of chopped parsley, The juice of one lemon mix ingredients together and set aside or chill

Step One- Rub for Lamb Leg—Blend 1 /4 c of olive oil, 3 minced garlic cloves, 1 tbsp of fresh cut rosemary. Season the lamb generously with salt and pepper then rub all over the lamb the packet of LBE spice .Let marinate for up to one hour or refrigerate up to 24 hours.

Step Two-If you r lamb is butterflied you can heat your grill to 375. and cook the lamb for 9 minutes each side.

If you are roasting your lamb in the oven cook for 25 minutes are 425. transfer your cooked lamb onto a cutting board and squeeze half a lemon over and tent with foil for 10 minutes when serving drizzle olive puree .

Grilled Chicken and Mango Kebabs

These flavorful, zesty kebabs are usually made with either chicken or turkey breast, but red meat can be used if you prefer.

Plan ahead, as marinating the meat for at least several hours will yield the best results

Ingredients:

Packet of Bollywood Seasoning Blend
1 1b. (454 g) cubed chicken
2 mangoes cut into cubes
1 Cubed Onion
1 sweet pepper cut into 3/4 inch pieces
In a large bowl stir together chicken cubes and Bollywood Nights Seasoning Blend
Mix all ingredients together and Let marinate 2- 24 hrs

DIRECTIONS
1. In a large bowl, whisk together the olive oil, lime juice, Bollywood Nights Seasoning, salt and sugar. Add the chicken and mangoes and stir gently to coat with the marinade. Cover and refrigerate for 2 to 4 hours.
2. Prepare a hot fire in a grill.
3. Remove the chicken and mangoes from the marinade and thread onto wood skewers, alternating the pieces and dividing them evenly.
4. Arrange the skewers on the grill and cook, turning once,
until the chicken is nicely charred and cooked through, 6 to 10 minutes. Transfer the skewers to a warmed plate
5. Sauce for skewers optional:
1/2 cup of Greek yogurt -1 tsp cinnamon. -1 teaspoon of honey to start you can add more if you like it
sweeter . The juice of half an orange. Mix all ingredients together and spoon on your kebabs.

Buffalo cauliflower wings

Buffalo cauliflower wings are a great substitution for chicken wings with a tangy buttery deliciousness and your favourite dipping sauce you have a snack that everyone will love! Here are the ingredients you will need to prepare the cauliflower:

• 1 c. all purpose flour or gluten free flour
• 1 tbsp. Or packet of Hot Daddy Seasoning
• 1 teaspoon salt and pepper
• 1 cup water
• 1 head cauliflower cut down into bite-sized pieces
• 1/4 cup of grated Parmesan or Asiago cheese

Here are the ingredients you will need to prepare the hot sauce:
• 1/2 cup of your favourite hot sauce
• Lime juice (1/2 a lime)
• Lemon juice (1 lemon)
• 3 tsp..of honey
• 1 teaspoon orange juice
• 2 tbsp of butter

First, preheat your oven to 450 degrees Fahrenheit. Then line a baking tray with parchment paper or use cooking spray. In a large mixing bowl, combine all the cauliflower ingredients (except for the cauliflower) together. Stir everything together, and feel free to add more water until the batter is incorporated and thin. After you get a nice consistency, add in the cauliflower. Make sure you coat each cauliflower bite evenly. Place the coated cauliflower on the baking pan sprinkle the packet of Hot Daddy and bake for 20 minutes in the oven. The crust should be solid when ready the meantime, create the hot sauce by heating a small pot over medium heat. First, add the 2 tbsp. of butter. Then, add the remaining ingredients. Cook until the butter has melted.
Take the cauliflower and gently pour the hot sauce over the cooked cauliflower or brush on the sauce. Mix until it’s coated evenly across each cauliflower bite. Then, place the cauliflower back in the oven for another 20 minutes.
Serve it with your favorite dipping sauce, and enjoy!

Good Karma Cod Bake

2 large potatoes peeled and sliced
1 sweet potato peeled and sliced
2 cups of bread crumbs
2 lbs cod fillets
1/2 cup of chopped onion
2 tablespoons of melted butter
1 Tbsp of Good Karma

DIRECTIONS
1. Melt butter and spread into a 13×5 casserole dish.
2. Peel and thinly slice potatoes. Place into the bottom of the dish. Sprinkle with salt and pepper.
3. Place chopped onions onto potato layer.
4. Place a layer of fish fillets on top of the potatoes and onions layer.
5. Place layer of dressing on top of fish fillets.
6. Bake in 375°F oven for about 30 minutes (30 minutes in convection oven, may take longer in conventional oven). Cook until fish is flaky and dressing has browned.
7. In an 8×11 casserole dish layer

In an 8×11 casserole dish, layer half the potato slices, all of the cod, and all of the onions. Top with remaining potato slices. In a small bowl, mix together olive oil, garlic, parsley, pepper flakes, paprika, and tomato sauce. Pour evenly over casserole.

Spanish Cod

A delicious fish dish with a pungent tomato sauce with green olives and LBE Spanish Seasonings. Add some some jumbo shrimp in with the fish for an even more delicious meal alternative.

Ingredients:
• 1 tablespoon butter
• 1 tablespoon olive oil
• 1/4 cup finely chopped onion
• 1 tablespoons chopped fresh garlic
• 1 cup tomato sauce
• 15 cherry tomatoes, halved
• 1/2 cup chopped green olives
• 1/4 cup marinated drained and coarsely chopped artichokes
• 1 dash black pepper
• 1 dash cayenne pepper if you like spicier
• chopped parsley
• 6 (4 ounce) cod fillets you can alternate with another fish fillet

Add all ingredients to list directions
Prep 20 minutes
Cook 15 minutes
Ready In 35 minutes

1. Heat butter and olive oil in a large skillet over medium heat.
2. Cook and stir onions and garlic until onions are slightly tender, being careful not to burn the garlic. Add tomato sauce and cherry tomatoes, and bring to a simmer.
3. Stir in green olives and marinated vegetables, and season with black pepper, cayenne pepper, and paprika.
4. Cook fillets in sauce over medium heat for 5 to 8 minutes, or until easily flaked with a fork. Serve immediately.
Garnish with extra virgin olive oil, freshly chopped parsley, and lemon wedges
