Chicken Wings

3 lbs. chicken wings

2 TBSP. of Baja Joe
1⁄2 cup Dijon mustard
2 teaspoons olive oil
2 garlic cloves, minced

DIRECTIONS

Cut the chicken wings into three pieces and discard tips.
Add wings into a bowl or baggie then add 2 tbsp. of Baja Joe Seasoning
Mix remaining ingredients into a bowl.
Add wings and stir.
Cover and marinate for 45 minutes ( YOU CAN USE IMMEDIATLEY IF YOU HAVN’T TIME)
Grill over medium-hot coals about 15-20 minutes, turning once
When you remove wings squeeze with

Hot Daddy Dip
1⁄4 cup Dijon mustard
2 garlic cloves, minced

Spiced Butter

Works beautifully on top of steak, fish or vegetables add some flavour simply to your meal today.

 

Mr.Carne Herb Butter – Add ½ c of Butter and 2 tbsp of Mr.Carne spice blend chop in ¼ cup of parsley and ¼ c green onion. Mix well roll into parchment paper and refrigerate until hard.  Slice thin for top of steak or potatoes.  Herb Butter will keep in the refrigerator up to 3 weeks.

Slice thin and serve on steak or potato even corn on the cob. Herb butter will keep in the refrigerator up to 3 weeks.

Memphis Thrill -Bacon Wrapped Stuffed Chicken Breast

Marinate Chicken Breast in Memphis Thrill ( or Put me Anywhere-Baja Joe –Hot Daddy) 4 boneless skinless chicken breast 8 tablespoons cream cheese 4 tablespoon green onion, Chopped 8 pieces bacon, Partially Cooked Directions: Pound out Chicken breast so it is about 1/4″ thick. Mix together cream cheese and green onions and spread cheese mixture over (1 side) of chicken breast. Roll Chicken breast up to conceal cream cheese. Wrap partially cooked bacon around chicken breast and secure with toothpick. Place on baking sheet and back for about 30 minutes at 375. Broil for about 5 minute to crisp bacon.

Baja Joe Tequilia Shrimp

1 cup fresh lime juice

1/2 cup honey

2 cloves garlic, minced

1/2 tsp salt

1 tbsp of Baja Joe Spice blend

Preparation:

Marinate Shrimp in Baja Joe and chill up to an hr

Thread 3 to 4 shrimp on wooden skewers. Mix together remaining ingredients in a medium bowl. Brush citrus-honey mixture on both sides of shrimp.

Preheat grill for high heat. Place shrimp on grill and cook for 2-3 minutes. Baste top sides with citrus-honey mixture. Turn shrimp once, grill for another 2 to 3 minutes, or until opaque. Remove from grill and serve immediately.
