Baja Joe & Lime Butter

Add ½ c of Butter and 1 tbsp of Baja Joe spice blend chop in ¼ cup of cilantro and squeeze the juice of one whole lime. Mix well and refrigerate until hard. Slice thin and serve on steak or potato even corn on the cob. Herb butter will keep in the refrigerator up to 3 weeks.

Spiced Butter works beautifully on top of steak, fish or vegetables add some flavour simply to your meal today.

Chicken & Mango Kebabs

Ingredients

African Seasoning Blend

1 1b (454 g) cubed chicken

2 mangoes cut into cubes

Cubed Onion

1 sweet pepper cut into 3/4 inch pieces

In a large bowl stir together chicken cubes and African Queen

Seasoning mix and Let marinate 2- 24 hrs

or alternate with  (Juicy Jerk Seasoning )

Directions-Skewer one each red or yellow pepper and onion cubed

chicken alternating then sprinkle with salt .

Grill on greased grill over high heat, turning once until desired doneness,

African Queen Butternut Squash Soup

Ingredients:

 African Queen Butternut Squash Soup

4-5 peeled and cubes potatoes
1/2 cubed onion
4 peeled carrots cut
1 peeled and cubed butternut squash
1-2 tbsp of African Queen seasoning
1 tsp sea salt
1 can coconut milk

Preparation:

Peel and cube your vegetables
In a large pot add enough water enough to cover vegetables with about 3-4 inches over
Add seasonings African Queen
Simmer for about 20 minutes to allow flavours to combine and deepen.
(You can also sauté the vegetables with olive oil if you prefer that method)
Put the soup in a blender and blend until smooth (for me I love it the smoother the better)
Add coconut milk after it is cooked. Coconut milk can ‘break’ if boiled and that can hurt the look of your soup
Return to the pot and warm again and serve
Add a swirl of honey and mix in to finish
Alternatives – Garnishes & Variations to add while cooking
2 tbsp grated fresh ginger- must be fresh!!!
Apple 2 chopped  , I have also added fresh pear which was delicious and subtle.

Baja Joe Tequilia Shrimp

1 cup fresh lime juice

1/2 cup honey

2 cloves garlic, minced

1/2 tsp salt

1 tbsp of Baja Joe Spice blend

Preparation:

Marinate Shrimp in Baja Joe and chill up to an hr

Thread 3 to 4 shrimp on wooden skewers. Mix together remaining ingredients in a medium bowl. Brush citrus-honey mixture on both sides of shrimp.

Preheat grill for high heat. Place shrimp on grill and cook for 2-3 minutes. Baste top sides with citrus-honey mixture. Turn shrimp once, grill for another 2 to 3 minutes, or until opaque. Remove from grill and serve immediately.

Hot Daddy Shrimp

Hot Daddy Shrimp
Ingredients:
2 pounds large shrimp, unpeeled

Marinade:
1/2 cup olive oil
1/4 fresh orange juice
1/4 cup fresh lime juice
2 medium shallots, finely chopped
2 medium garlic cloves, minced

2 tbsp Hot Daddy Seasoning blend

Preparation:

Thread 3 to 4 shrimp on the skewers. If using bamboo skewers, make sure to soak for an hour before threading shrimp. Place in a large shallow non-aluminum dish.

To prepare the marinade: mix together orange juice , lime juice and garlic cloves , Hot Daddy Seasoning Blend  . Add in olive oil slowly, whisking until mixture is combined. Pour over shrimp and marinate in refrigerator for at least 1 to 4 hours.

Preheat grill for medium heat. Place shrimp on grill and cook for about 3 to 4 minutes on each side. Remove from the grill, take the shrimp off skewers, and serve immediately.

Baked Chicken Wings

Our spice blends to use. Memphis Thrill, Hot Daddy, Cook your Own Damn Dinner,Bollywood Nights makes a delicious wing.Follow directions below once the wings are cooked its optional to sprinkle with 2 tbsp.brown sugar and stir  to finish .

  1. Thoroughly dry the chicken wings with paper towels to remove any excess liquid and let rest.
  2.  Place chicken wings in a large bowl or baggie. Drizzle with olive oil and rub 1 tbsp of your choice of seasoning evenly onto chicken wings.
  3. Let marinate 2- 24 hrs ( they still taste great if you don’t have the time to marinate)Sprinkle another tbsp of the seasoning on top of the chicken wings
  4.  Place a baker’s rack over the top of a cookie sheet. Line the rack with the wings
  5. Bake at 375 degrees for 20 minutes, flip, and bake for another 10 minutes, then turn the broiler on for an additional 10 minutes to make crispy. Then enjoy savour and don’t forget to share.

Stuffed Meatball Recipe

You can alternate this recipe with any of our seasonings.

Memphis Thrill

Directions:

Preheat oven to 375 degrees F (190 degrees c)

2 lbs beef

1 cup finely chopped onion

1 cup of chopped peppers (optional)

1 cup of panko crumbs or gluten free crumbs

2 eggs

1 tsp salt (optional)

2 tbsp of Memphis Thrill Seasoning

1 pound fresh mozzarella cut into small cubes

Place all ingredients and mix until evenly blended. Then form and shape into meatballs. Make a hole in the meatball with your finger and place cheese cube in the hole. Seal the meatball and place on baking sheet. Bake for about 30 min. Serve on their own or with your choice of dipping sauce.

Juicy Jerk Chicken

Juicy Jerk Chicken
You’ll Need…

8 chicken legs (with back attached) about 4-5 lbs
1 lemon or lime (or juice of one fresh orange)
3 tablespoons of juicy jerk seasoning blend
Tip: Line your baking dish with aluminum foil to make the clean-up after easier.

Trim off the excess skin and fat off the chicken (but leave most of the skin – you can remove it later before eating). Now take a pairing knife or fork and pierce the chicken pieces. Sprinkle the dry rub over the trimmed chicken; this will allow the dry rub to penetrate the meat and really “juice” it up. In a zip lock bag or bowl with a lid, put the juicy jerk rub and mix everything well. Now seal and place in the fridge for at least 2 hours (can be up to 24 hours). Bake at 375 for about 45 minutes or until juices are running clear. When it’s cooked, squeeze some fresh citrus and sprinkle a little finishing salt– you will have a succulent tasty piece of chicken. Mmm..
